- ½ cup of almond butter
- Three cups of fresh or frozen raspberries, divided
- A container of vegan cream cheese
- Two teaspoons of vanilla extract
- ½ cup of refined coconut oil, melted
- ¾ of coconut milk
- 11/4 cups of granulated sugar
- Two cups of cashews (drained and rinsed)
Instructions on how to make the Vegan cheesecake:
Step 1:
Start by making the crust and for that you will need to blend the pulse oats, coconut flakes and almonds in a food processor until the mixture forms fine crumbs. Move the mixture into a medium bowl and fold in salt, maple syrup and almond butter.
Step 2:
Coat the bottom of an 8″ or 9″ spring form pan with coconut oil and press the crust evenly into it.
Step 3:
It’s time to make the filling, so heat coconut milk and 3/4 cups sugar in a small pot over medium heat until sugar is dissolved. Allow to cool.
